    DIRT is born on paper under a different name (actually, there were many, many different names before DIRT was officially "DIRT").

  • nov 2015

    After two years of research, planning, menu development, and construction, we open our first location in a small space on South Beach a few blocks from the beach.

  • mar 2016

    Within five months of opening, we are named "Best New Concept" by StarChefs.

  • jun 2016

    DIRT is named "Best Inexpensive Restaurant" by the Miami New Times.

  • jun 2017

    We move our Miami Beach operations to a new, bigger location in Sunset Harbour, Miami's best dining neighborhood, within walking distance of our friends at Anatomy, Barry's Bootcamp, Flywheel, Green Monkey Yoga, Modo Yoga, Shift, and Sweat440!

    DIRT opens on the "mainland" in Mary Brickell Village, in the heart of downtown Miami.

  • nov 2018

    We announced our opening in Arlington, Virginia, our first location outside of Florida!

  • dec 2018

    We launched DIRT Does Fitness, a partnership between DIRT, lululemon, Nike, and various gyms in Miami Beach. We offer free classes every 1-2 weeks to promote a healthy lifestyle of exercise, quality food, community, and FUN.

Jeff LaTulippe

Co-Founder

Jeff is responsible for all aspects of DIRT's operations. He began writing the business plan for DIRT with no prior experience in the restaurant industry except for a few months as a busboy in high school. Prior to taking the entrepreneurial plunge with DIRT, Jeff worked in finance, helping executives in various industries to execute their strategic visions.

Jeff's passion for DIRT and his desire to maintain a healthy lifestyle are based on his own personal struggles with weight loss and a family history plagued by extremely unhealthy lifestyles. After tipping the scales at 208 pounds at the age of 20, Jeff lost 50 pounds over the next decade after embracing a healthy diet and exercise regimen. This drastic change is what inspired him to create DIRT.

Aaron Licardo

Director Of Operations

Aaron Licardo joined DIRT in May 2017 and currently serves as the Company's Director of Operations in Miami, where he oversees all unit-level operations.

Prior to joining DIRT, Aaron became the Executive Chef of Tarpon Bend Raw Bar & Grill in Coral Gables at the age of 23. Within two years, he held dual roles as Executive Chef and General Manager at Tarpon Bend. He has also held hospitality positions at various hotels and resorts, including Hilton, Marriott, and Hyatt.

The son of a chef, Aaron started washing dishes at the age of 14 and cooking at 15 at Bob's Clam Hut, which was featured on Food Network's Diners, Drive-ins, and Dives in his hometown of Kittery, Maine. He moved to Miami at 18 and graduated from Johnson & Wales University with a Bachelor's Degree in Culinary & Hospitality Management in 2007.

Aaron loves to “pay it forward" by developing and guiding new team members both professionally and personally. He lives in Miami, where he enjoys running throughout the downtown area and Key Biscayne.

Matt Ernst

Co-Founder

Matt works on all aspects of DIRT’s strategic direction and execution. A life-long entrepreneur, Matt was the founder and CEO of Amentra, an IT systems integrator that became one of the fastest growing privately held companies in North America as recognized by Inc. and Deloitte & Touche. After eight years of rapid growth, Amentra was sold to Red Hat.

JJ

Co-Founder + Coo

JJ is responsible for business operations, company culture and vision, community engagement, and the customer experience. In addition, he works closely with Co-Founders Jeff LaTulippe and Matt Ernst on strategic planning and aggressive growth.

Prior to DIRT, JJ worked in the restaurant industry for over twenty years in various roles with both privately held companies and public restaurant groups such as Brinker International, Happy + Hale and Bloomin' Brands.

JJ attended the School of Journalism and Mass Communications at The University of North Carolina at Chapel Hill. He was also a Mentor for the Mentored Study Program with The Fuqua School of Business at Duke University.

JJ lives in Miami Beach with his wife and two children. He is an active health and wellness advocate in the community, a Lululemon Ambassador, and is passionate about educating youth in nutrition and physical activity

THE DIRT ON DIRT.

My favorite restaurant in Miami. There truly is something for everybody here whether you are paleo, vegan, a macro counter, or just all around healthy. Especially great spot to bring people with varying tastes and diets. The only thing as consistent as the food is the service. From ownership down to everyday staff you truly feel like they care about the customer and also that they love what they do. Best in class restaurant in this space not just in Miami but in all of the US and Canada. They have set the bar. Will continue to be a loyal customer.

Overall, this restaurant is 5 stars from the atmosphere to the staff. Located in Downtown Miami, this place stands out as an establishment where you can have great food with people that you want to have a good time with. There isn't much seating inside, but there is plenty of seating outside for large groups of people. I ordered the matcha protein pancakes and I immediately fell in love. Dirt feels like a home away from home. When I went to this restaurant, my friends and I spent about 3 hours there. That's how comfortable this place is. I highly recommend parking in a garage so you don't have to worry about a parking ticket if you stay too long while enjoying yourself.
